Fun Fritters That Keep You're Tot  Fuller For Longer

Is you're little one always begging you for snacks throughout the day? 

Well, a simple and effective way to prevent the pestering is to give them high fibre snacks!

And today you're going to learn a quick and easy recipe to help you do just that... Tasty Corn fritters! 

Designed to keep your tot fuller for longer while delivering a potent punch of essential vitamins and minerals, Amber and I are going to show you how to whip these up in under 30 mins!

But before we share how to make these tasty little snacks, let me share why high fibre meals are essential for your child's diet.

Even from an early age, dietary fibre is essential. It aids digestion, it can decrease the risk of heart disease, strokes, type 2 diabetes and bowel cancer later in life. And on top of that, fibre helps them stay fuller for longer. 

And guess what... Corn is packed full of it!

In fact, if you add 100g of sweetcorn to a meal, you get 2.4g of fibre, and if you add it to hearty meals containing Pulses or Wholegrains you’re all set for your daily intake.

But that's not all these little yellow taste sensations brings to the table. 

Corn is a great way to fill them with vitamin C, a powerhouse vitamin that supports the wellbeing of our immune system as it combats fatigue and the B vitamin (thiamine) which is responsible for breaking down our food turning it into energy as well as keeping the nervous system healthy. 

So if you find your little human is running out of steam throughout the day, there truly is no better snack than Corn fritters.

Ok enough Science.. Let's get cooking!  


  • 180g plain or wholemeal flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarb of soda
  • 4 eggs
  • 250mls milk
  • 2 spring onions, sliced
  • 1/2 red chilli, de-seeded and sliced (optional)
  • handful of fresh coriander, chopped (optional)
  • 350g sweetcorn
  • 1 large sweet potato, grated
  • 1 tbsp oil


  1. 1
    Mix the flour and baking powder in a bowl. 
  2. 2
    Pour in the eggs and milk and whisk to combine to a smooth batter. 
  3. 3
    Stir in the rest of the ingredients.
  4. 4
    Fry the fritters a couple of tablespoons at a time in a hot pan with a tablespoon of oil.

That's it... They really couldn't be easier to prepare!
