A Quick, Healthy Meal Toddlers Will Love

In todays cook along with Amber and myself, we're knocking up a batch of scrumptious Kale and Pesto Pizza Rolls.
Yep... you heard me right 'Kale'!
We thought we'd show you a fun and tasty way to get this super food into your child's diet.
Kale is a great supporter of the immune system, with four times the vitamin C content and twice the selenium content of spinach, as well as nutrients like vitamin E and beta-carotene.
It is an amazing source of plant-based calcium, which kids need for the development of strong bones and teeth.
Kale is also a good source of vitamin K, which works with vitamin D to support healthy bones and a super strong immune response.
Who'd of thought all of that goodness could come from a single plant!
Ingredients:
The Pesto...
The Pizza...
Directions...
Preheat the oven to 180^C and grease a 12 hole muffin tray.
Put all the ingredients for the pesto into a food processor and blitz until smooth, then add lemon and oil to taste.
Unroll the pizza dough flat and spread with pesto. Then scatter your toppings and mozzarella.
Slowly roll the pizza dough along the long edge and with a serrated knife cut into 12 and place into the muffin tray.
Cook for 15-18minutes or until the roll-ups are cooked all the way through.
That's it!
Take out, let them cool and enjoy. Getting your child to enjoy Kale couldn't be easier 🙂
